About May's wagashi

May's textile design is about Musha-e / Japanese warrior prints.
We serve a chimaki-shaped wagashi inspired by the textile. Chimaki, a rice cake wrapped in a bamboo leaf, which is enjoyed on May 5 to celebrate Tango no Sekku that people pray for boys' courage and determination.
New potatoes in season are milled roughly, mixed with uirō (sweet rice jelly), steamed to make potato dumplings. We made three different taste of this new potato dumplings.

The first one has a simple sugar taste. The original flavor of new potatoes and mild sweet taste will impress you.
The second one has a soy sauce flavor. Matsuno Shoyu, handmade soy sauce by an old-established store in Kyoto, is mixed in to give a natural aroma and taste.
The last flavor is salt. Salt from Okinawa called nuchimāsu is added to achieve the balance and bring out the sweetness of potatoes.
Finally, it is topping with sugared black soybeans and wrapped in a bamboo leaf to present you an amazing fragrance!
