March's textile designOmekashi

Omekashi, means dressing and making up to appear particularly attractive.
In old times, when young girls fancied up with their best kimono,
kushi combs and kanzashi (hair ornaments used in traditional Japanese hairstyles),
they would hear people bantering,
"And where are you going all dressed up in your Sunday best?"
Besides, giving combs as present represents confessions of love during the Edo period.

About March's wagashi

March's wagashi is inspired by Hishimochi, used for decoration on the Hinamatsuri or Doll festival, when people pray for the healthy growth of girls.
Hishimochi is typically formed from 3 layers of color: pink, white, and green from top to the bottom.
Each color has a meaning: The "green" shoots are sprouting under the "white" lingering snow, while "pink" peach blossom is blooming. They are marking the arrival of spring.

The top layer colored in pink is the mixture of peach flavored kinton(mashed tsukune yam) and honeyed peach.
The middle white layer is made of uirō(sweet rice jelly) with white chocolates and milk kneaded inside.
The bottom green layer is a fluffly green-tea-flavor ukishima(translated "floating island", a traditional Japanese confection made from sweet red beans, eggs and flour).
In addition, we dusted a layer of dried up crispy ukishima under the bottom.
Please enjoy the refreshing flavor and texture of this unique Hshimochi we served.
